Basic oil and vinegar salad dressing recipe

1/2 C olive oil
1/4 C white, rice, red wine, balsalmic, etc, vinegar
Spices to taste, usually 1 to 3 tsp of dried herbs, like pepper, basil, garlic, thyme, rosemary, oregano, or use a premix like an Italian blend or herbs de Provence, or other spice/herb blends.
To sweeten a bit and take the edge off the herbs and vinegar, add a packet or two of a safe sweetening blend like Stevia Balance or Sweet Leaf Stevia. To make it really sweet, add 1 to 3 tsp honey. A little bit of sweetening goes a long way in salad dressing. The ingredients must have a chance to meld before one can get an accurate assessment of the flavor. It is best to bottle at least a week beforehand.

Here's a good one, slightly sweet and decorative with whole garlic cloves and a sprig of herbs in it.

1/2 C extra virgin olive oil
1/4 C white vinegar
1 TBS herbs de Provence (dried)
3 to 5 peeled whole cloves of garlic (do not crush, used to impart slight flavor and marinate)
2 packets stevia sweetener
Sprig of fresh rosemary, thyme, oregano, or other suitable herb.
